As a Mac programmer, I'll tell you that unless there is a specific preference in the application for changing the keyboard mapping, there is really no way to disable that functionality. Things like mapping keyboard shortcuts to specific actions are usually embedded in the code.
If it was a menu command shortcut like CMD-S you could change it with ResEdit since those keys are listed in the menu resources themselves. Single key shortcuts are not (and Apple frowns on them anyway since they only work when you're not in a text edit field as you know!)
Short of disassembling the code, figuring out WHERE this is happening and patching it, you're not gonna be able to change it. And if you did hack it then it might break the default text editing backspace behaviour.
