I dunno, they're interesting, great history, and seems relatable and accessible to a lot of folks. Sure they're not uncommon, but you don't really see them on the road (probably because they top out at like 40mph!) You can only get so excited about the 10th rich-guy Camaro, or BMW, or Porsche you've seen at a car show, and I like Camaros, and BMWs, and Porsches.
Old trucks are also lucky in that they can get away with a lot of "patina" to the point of looking down right rough and people still love them.
I have an old International Scout that pretty rough and gets tons of attention even thought it's not particularly rare or valuable. I bet it would at a car show too. Peoples feelings about cars are weird. I got a fair amount of 'rich kid' ridicule when I was younger with my Saab 9000 I guess because it was a euro import, even though I paid $1300 for it and no one would bat an eye if I had a nearly new Camry or Ford or something that was worth 10 times as much.
