I'll probably be repeating some of what's already been said, but here it goes anyway.
First, do yourself a favor and take the MSF basic riding course. Then, buy a good full face helmet, nice riding gloves, and boots, at a minimum. I also recommend a proper riding jacket and pants. Oh yeah and wear earplugs when you ride. It's counterintuitive but it really helps with your awareness, reduces fatigue, and protects your hearing.
For bikes, I recommend a small-to-medium, lightweight standard or cruiser as a first bike. I definitely don't recommend a big (1000+ cc) cruiser or any of the 600cc and up sportbikes. Too much weight and/or power.
I have a Suzuki GS500, which I'd wholeheartedly recommend based on the use you're describing. I mainly use mine for occasional commuting (19 miles each way) and joyriding, it's been very reliable, easy to work on, and it's fun to ride. Faster than the vast majority of cars but not so fast that you'll do something stupid on it.
Other bikes to consider would be any of the 650-700 v-twin cruisers or the 500cc Ninja. Even the 250cc Ninja is a fun bike. The KLR650 dual sport somebody else mentioned earlier would be good.
I personally don't think something like the Suzuki SV650 is a great beginner big, at 70+ hp it's a bit too powerful IMHO.
