I broke down and bought a suburban for this very reason. I also had to tow a 4500lb boat, but the seating arrangement is most important. First I got a Tahoe in 2000 and then a Suburban Z71 in 2002. I just bought a new 2004 Z71 Suburban with everything in it for $36K. I got the captains chairs for the second row which give great access to the third seat. Kids actually like being in the 3rd row and the captains chairs are great for adults in the second row.
My gas mileage isn't as bad as you think - on long road trips in 2wd I get 18/19 MPG - I usually get at least 16. Tahoe would get the same so the extra 2 feet is worth it to go Suburban. For the comfort and space the Suburban can't be beat. I have never had one warranty claim on any of these vehicles over the last 4 years. I will have one until the kids go to college. My other car which racks up the most miles is fuel efficient.
