I owned mk3 Supra for 8 years and 100k+ miles - so I know quite a bit about them. Trust me but this car is done right with a very troughtful and balanced set of upgrades. The mk3 chassis handles quite well with double wishbone suspension on all 4 corners (not many sport cars can claim that). And 2JZ is a legend even now - more than 20 years after it introduction. Yes, there will be some turbo lag on a single-turbo 20psi car - but one can say it just adds character to the car. If this is a problem the twin-turbo V8 GTO with only 9psi (that Norm9-5 suggested) may be another option - but I would still prefer 2JZ.

The rollcage is a requirement for 11-second cars or you would not be allowed to race.
