MGB temp guage always reads 0. Over heating symptoms?

I have a 1979 MGB that my dad passed down to me. He bought it new, but it's been parked for 26 years. I just rebuilt the engine and carburetor, changed all of the fluids and had the fuel system cleaned out.
Now, about my question, my temperature gauage does not register when hooked up in the car. It has a new sending unit and voltage stabelizer (drops voltage to 10V). It will do a full sweep to hot, as expected, if I ground out the wire at the sending unit.
At one point, I did have the wrong wire hooked up to the sending unit. Could a direct supply of 12V have fried it?
Most importantly, what symptoms would I notice in the engine does run hot before I can get the guage figured out?
