If your EGT's are too high you can exceed the temperature-handling capabilities of engine and turbo parts. Melted valves/pistons/turbines don't work real well. :)
Tuning can only manipulate EGT's to a certain extent that are in many cases limited by various different hardware pieces (while making more power than stock). A good example on my 9-3 is that the turbine side (hot exhaust side that drives the cold compressor side) of the turbo, the area becomes very restrictive when you want to start flowing more exhaust than stock to make more power. The benefit of a smaller more restrictive exhaust side setup is that the turbo tends to spool more quickly, the downside of that is that it ultimately won't pass enough exhaust volume easily enough, which will trap heat and impede ultimate flow. You can't cram more air into the intake side without also allowing more exhaust out.
900 C is pretty hot, according to old post by Dr. Boost on here, 1000 C (check that, he may have said 980 C) is the limit. In either case, that's really hot. Outside of the Saab world many people will tell you that 900 C is waaay too hot already.
