All cars work best at the right temperature, as you say. And there's no point trying to tune or troubleshoot a car without establishing a base-line. The previous owner presumably put on the aftermarket fan because something was wrong - you have to return to basics! Probably best to go back to a standard Saab fan setup, plus check your thermostat (or preferably just replace it).
What year and model is your car, by the way? I don't think your past posts tell us that.
This isn't really a performance query - you'll do better on the 9000 board.
