Outside ambient temp affects the oil pressure reading in relation to the viscosity you run as well. Been running with an OPG myself since I bought my car practically.
In that type of heat you need to run a 15w-50 oil, only way you'll have a chance of holding higher pressure to keep you at ease.
As for the method of oil pressure regulation. It's just a simple oil relief valve that is spring operated. When oil pressure is greater then 50PSI the spring is forced down opening the valve and oil is bled off.
