I have a 3" JT system on my '96 Aero. It works well and is not terribly loud (I didn't want noise). In fact, the sound is quite pleasing. I went for the 3" because I'm planning more upgrades in the future and thought a 3" turbo-back system would relieve more of the stress on the engine.
I'm told that a 2.5" system can help mid-range torque slightly, compared to a 3", but the 3" should help top-end power. While 0.5" doesn't sound like much, a 3" system has 44% more cross-sectional area than a 2.5" system.
Regarding stainless, my system is aluminised mild steel. Mild steel tends to be rather quieter than stainless. It is generally stainless components that give the raspiness that is often associated with that far-eastern cereal crop mentioned here occasionally. I know someone who fitted an Abbott stainless system to a 9000 and regretted it, saying it "made a luxury car sound like a Formula 1 car".
However, everyone is different, and if that's the sound you're after, then I'd go with stainless.
