Well regarding the brake lines, I assume you mean replacing the rubber hoses with braided-stainless performance parts? I'd rate the difficulty about a 3 where 1 is "I can barely change my own oil" and 10 is "I rebuild automatic transmissions in my sleep" ;^) Get the lines from a supplier who knows Saabs - getting halfway through and finding the parts don't fit can be a real drag. Several of the sponsors of this site sell them. And as you've probably found out, carefully bleeding the system afterward is a must.
As for caliper paint, there are a variety of high-temp paints out there that would work. You might be able to use a high-temp spray paint designed for grills and such. Or for something that might look a little better (and probably be more expensive and harder to apply), do a Google search on "brake caliper paint" and you'll see a multitude of choices.
All the usual caveats about painting apply: make sure you don't get paint where it doesn't belong (rotors, caliper slides, piston, any rubber parts), and pay careful attention to surface preparation.
