Basically a measure of the amount of heat-transfer (variable) through a defined amount of material.
Here's a good link that quickly describes what you're discussing as well as some tables with of the more common materials. CKPaden is right about SS compared to aluminum, 0.00086 to 0.00885 respectively (according to that site). But just about any type of plastic or composite material will outperform any uninsulated metal.
An insteresting related side note (to me anyway): Anyone know why diamond-tipped tooling is generally used for difficult cutting jobs? The main reason it's effective is not because of the diamond's hardness like everyone thinks, it's because the carbon chains in the diamond are EXTREMELY effective at wicking heat away from the cutting surface, helping to preserve the metals original characteristics and edge. Generally, if a material conducts electricity it will be a similarily good conductor of heat--like copper transfers both heat and electricity considerably better than aluminum. Diamond is the exception to that rule because it is the best heat conductor but does not conduct electricity, pretty neat.
