I have been looking into this too, as the seats in my '86 900S are getting old, and the leather is fading. The thought replacing 18 year old leather with, at best, 14 year old leather from a junkyard doesn't seem like a great option...
Right now, I am looking at adapting seats from another make of car. Celicas and RSXs have fantastic seats, and my buddy at work drives a Tiburon GT V6 which has ultra-comfy and perfectly grippy seats. They have the added bonus of being tilt/slide, so when you tilt the seatback forward, the whole seat slides forwards about 6" to ease access to the back seat.
I've casually worked with Damien to get some adapters built, but I'm going back and forth on whether it's better to adapt the very common Honda or Toyota seat bolt patterns, or the more unusual Hyundai bolt pattern. From junkyards, used leather RSX or Celica seats run $400-$500 each (or more), but I can get Tiburon seats for $250. Of course, using such an adapter bracket one could in theory also more easily mount aftermarket seats that are made for these cars, although I dunno what a two adapter install would actually be like.
Not sure if this is of any use, but it's where I'm probably going. FWIW, Tiburon seats look like:
