I've got several perspectives on this topic...
First of all, track days here in NorCal are filled out by the normal performance cars of BMW, Porsche, Audi, Mustang, Camaro, Miata, Corvette, some VW, but rarely do I ever see another Saab or Volvo. Thats OK because like most others here, my Saab will go way faster than anybody expects. Just one of the benefits of Saab Turbo :)
Regarding rice-racers and track days, we hardly ever get any ricers out there. Sure there is an occasional civic hatchback or integra, but when properly equipped these make really great track cars. So far nothing with a sky-tower wing or neon underneath. Considering that California (I'm guessing) has more riced-out cars than any other place on the planet, and lots of different road courses, isn't this interesting (and so telling of their poser ways)?
As for taking rides with students, I still get nervous every time I get into a student's car, especially the ones with big engines, marginal skills, and huge egos. Things can get ugly real fast. I prefer novice drivers with, say, a Subie WRX or Miata...moderate power, moderate speed cars that can handle well enough to be forgiving to the learning driver.
