You would have to do something basically different from what professional tuners do to make it interesting. Find a different feature from those offered by the pros, and you might have a shot.
At the same time you only have a small pool of people (Saab is not a popular car to "tune") to help you with suggestions and feedback and testing the new code, which can be more time consuming than writing it in the first place.
There is always more trouble attached to using any kind of open source software. None survive long just by being "free" (meaning in terms of $$ v. time). $500-$1k is not a lot of money compared to most serious intake/turbo/exhaust hardware upgrades, let alone a new car.
To get something different, you would have to disassemble and hack the code, not just change the tables (maps). Changing the tables might not violate the copyrights, hacking the software probably would.
Most hex code can be turned back into assembly language, but not back into C. Significant investment in hardware, possibly in-circuit emulator, engine test equipment, development software, familiarity with the processor used in the ecu, unless it is a very common type... not to mention a good understanding of how the ecu runs the engine.
