Light grease on the end of the input shaft is a good idea. I don't personally grease the release bearing. But I confess I don't know what others may do- maybe I should be doing that and don't know it.
So you have the judder on take off and you've tried to do everything correctly and it's still there.
What do you mean "the next step is to replace the clutch"? Sounds like you already did... Are you suspecting that the new components are defective?
Here's a list of all the things that have caused takeoff judder in my VSaabs:
1) oil on the clutch due to a leaky transmission seal.
2) worn clutch fork that causes the release bearing to not sit parallel to the pressure plate. the clutch fork holes get oblong where the release bearing mounts. also the actuating pin that fits into the slave cylinder- the mounting of that pin on the clutch fork can get oblong. the latter doesn't cause judder, but makes the mechanism sloppy.
3) worn front axles- where the Tee fits into the inner axle.
I can't think of anything else. A bad flywheel could cause judder, but that's never happened to me. I suppose poorly operating clutch hydraulics could cause a problem like judder.
Wish I could be more specific with help, but it sounds like you're doing all the right things.
