I'm with spiv. I run 150 main jet on one of my v4s and a 165 on the other. The larger jet goes with the bigger exhaust. I purchased two 34 ICTs from a VW and they were running 135s each. I have had the same problem when trying to pass emissions with my sonett. I have to really lean the car out to get it to pass. When it is lean enough to pass, it does exactly what you are describing. No disrespect but to get to the main jet, in case you don't know, you remove the top cover on the carb. At the bottom of the bowl you'll see the "jet" (looks like a grommet with a hole in the middle) removable via a flat head screwdriver.
There are more to these carbs than just main jets so you may consider buying Jack ashcraft's book on how to work with the weber. I have heard it to be most helpful.
