If you've been making only short trips in cold weather then it's
pretty common to get condensation in the oil, which will make a syrup
colored emulsion. This is especially common in air cooled engines
(like motorcycles). If you take the car for a drive long enough to
get it up to full temperature then the water should boil off and the
oil should look like oil.

It's not unusual for a PCV valve to pass a bit of air in both
directions but do the proper thing under operating conditions. This
appears to be why your car takes one specific PCV valve and not just
any PCV valve - the flapper valve inside are weighted differently
and/or they have different springs behind them (that's just a guess
made after pulling a few apart wondering how they are different).
