that provides a perfect surface for the new gasket. I always do this, i did not once and had to do take the head off again 2 months later.
Also, I always use "copper gasket" spray, on the block, then set the hg on it and then spray the gasket to cover the surface that the head will sit on. Dont worry about the copper stuff getting in the combustion chamber, it will burn out and not damage anything.
I would do timing chain too, might as well. I dont know on the 9-5 but on other saabs it is easier to do with a little special tool, but it is doable other ways.
