The 9-5 is a different car than your 1987 c900. It is a bigger touring car. Better on the highway, safer, but less fun in the twisty stuff. That comes with the size. The c900 is a whole heck of a lot of fun (I have 2 of them), but it's not as good a long haul car (certainly now at 20-30 years old). That said, the 9-5 does actually handle very well - it just isn't as direct in terms of feel - it is more comfortable... ie I take clover leafs at about the same speed... but the c900 makes you feel like you're blasting around the curve whereas the 9-5 feels cushy doing it...
With that in mind, you can make the 9-5 drive in a more responsive way, there are suspension upgrades possible. I noticed a big improvement in directness by going to Koni shocks, 17" wheels and performance tires. Much less floaty than the worn sachs (80k miles) shocks... bounce test did nothing but the improvements before/after indicated it was time... konis aren't harsh, or at least to me coming from a c900...
Other than that, my opinion is 04+. At this point, that probably means Dame Edna is for you, and then you will most likely get 17" wheels anyway... and 260hp... many issues were sorted out after 04.
