I put Bilstein HD shocks on the rear of my '05 Aero along with new springs. It did raise the height perhaps .25 inch. There was an improvement in handling.
Any 9-5 with more than 100k miles will need to have the rear-most subframe bushings replaced. Did you do those? There will be a noticeable difference in handling. There are LOTS of posts about those bushings on this site. After doing those bushings do a reassessment.
When you do the front struts also consider doing the lower control arms and all the attached bushings.
