One check I've done on a head is to bench test the valves for leakage. Mount the head right side up on blocks. Tilt it so the valve heads are close to level. Add about a half teaspoon of WD-40 in each port. Watch for seepage into the combustion chamber. A trace of wetness is probably OK. If there is a trail of seepage you'll need to lap that valve.
