I'll guess that the wire lead to the oil pressure sender got knocked off, or the oil pressure sender itself was nailed and it is sending a false signal to the oil pressure indicator light.
Plugging the lines is fine, or just put a tube between the two oil lines, and clamp them well. The thermostat inside the oil adapter opens the valve at about 175 degrees as I recall. Unless you're driving the car hard, I would worry about the oil not going to a cooler.
Be sure to check your oil level to make sure the engine didn't pump it all out when the line was severed.
What a bummer....you worked your tail off on that beast.
