If the car is not over heating and it would have if you've sat for long periods of time I would look to the sending unit. I've had three different senders and all have read differently. I don't over heat but one unit got near the red and then the fan would kick in. The sender I have now, with no changes to the systems, is reading very low with the fan kicking in when the gauge points at three o'clock. This is also the cheapest and easiest thing to check first. I think you will find nothing is wrong and if it was you would already know it. The fans kicking in and the drop in temp when moving is normal.
