As RJ says, defrost comes on as a default in cases where you might have dew buildup. I usually expect it to come on in defrost unless it's downright hot outside. Don't worry about it.
As to the trip odometer reset - Truth be told, sometimes the mechanism gets sticky. On my '92 9000T, pressing the button once doesn't always reset to zero - close, but not zero. Quite often it takes two or three (or more tries), and the button is not easy to push. I try and be gentle with it, because I don't want to break the mechanism. Sometimes if it doesn't reset cleanly, I'll drive a little (a few tenths of a mile) and try again. I don't recommend pushing the button while moving - I've got no good reason for that, but it's something I don't do.
As to the odometer being tampered with - the trip odo on my '92 is sticky, and I know for a fact that the odo has never been tampered with - I bought the car new in '92, and saw it delivered off the truck with 3 miles on the odometer. The trip odo became sticky after about 30K miles or so. It works just fine on my '88. Go figure.
I would be gentle with the reset button, and go with that. Getting access to the mechanism is a pain - wait until you need to replace the light bulbs for the display - the instrument cluster has to be lifted up a little to do that - and at that time you might squirt in some lubricant. But I wouldn't go into the mechanism just to free the reset button up a little.
