The engine temperature is controlled by coolant. Coolant temperature is determined by the size and condition of the radiator, water pump, and cooling channels. And most importantly, by the temperature of ambient air! When an engine is running full out, all other things being equal, the oil properties are determined by ambient temperature.
You can ignore any recommendation you like, but that is the reason different weight oils are recommended during different seasons, across the board.
