I tried it once on a scrap car, it is difficult and takes quite a bit of practice to get it right. I don't know of anyplace that still sells bar solder either. There are also health concerns with using lead along with the need to completely remove all the trim and the possibility of igniting any rusproofing inside the panels.
I haven't seen any of the problems you describe with plastic filler in 20+ years I've done body work both professionally and hobby.
