BUT, If you got a new cam grind be sure to reve the engine immediately after first startup, and vary the RPM between 2,500 and 4,000 for the first 20 minutes of running.
Uhhh, I am not sure of any good basis for this. 4000 rpm is near top end for unmodified V4s, varying engine speed within reason is fine but I would be inclined to stay Idle-to-2500.

I think your machine shop is severely (like 20-30 years) out of date. This is old wisdom that does not apply with modern machining technology and lubrication capability. I would run fast to a younger or more up-to-date machine shop. Put in some 10-30 detergent oil right now.
Also on the cam lobes and bearing surfaces as well as the followers, I was advised to use high-temp molybdenum grease rather than oil or engine assembly lube.
