When the pedal is full-up (not pressing the pedal at all) the brake lines are open to the reservoir.
When you press the pedal just a bit, that opening closes and the pistons push fluid towards the calipers. Yes, a little fluid. But it won't KEEP draining under gravity.
Still, it also helps for you to be ready with the new parts & don't take forever putting them in.
