I'll tacklea couple of your questions:
When you pull the brake line off the old caliper, fluid will drain out. Eventually you will drain the master cyl which will greatly complicate the job. So, have a plugged rubber hose to put over the line to slow the draining. That will give you time to swap the caliper.
Bleeding will be the same as usual. You can do it manually or use one of the bleeding systems mentioned here. If it were me, I would flush the system first with the old calipers in place, then swap. That way you won't push dirty fluid into the new calipers.
To get the flud out of the old calipers, use channelocks to gently push back the piston. Fluid will flow back out of the open brake line fitting. You won't be able to force it all out that way, so you will need to hang the caliper to let it drain. Put them in ziplock bags and you'll be all set for storage. If you decide to reuse them later, a quick rebuild with new seals would be a good idea.
