I have a hard time bringing wheels up to torque spec when the car is in the air. I find that the wheels tend to spin (unless I have someone sitting in the car with their foot on the brake) as I torque them.
I always "tighten" the bolts while the car is in the air, then torque them while it is on the ground. That way, the wheels don't spin as I apply the appropriate amount of torque. I too do the star or criss-cross pattern as I tighten them to spec. The wheels are set against the hub with the preliminary tightening, and as someone mentioned, the flex in the tires allows for that seating to remain solid.
