I had the opportunity to build a new house a couple years ago. I went with granite too. Granite looks great with wood, and I like how cool it is. It was less expensive than corian or synthetic granite substitutes. More expensive than formica or tile. I doubt granite will go out of style either. (You do not want spouse or family to complain that the kitchen looks dated only a few years after you're done paying for it.)
Custom cabinets from a local wood craftsman were less expensive, better made (plywood interiors, no mdf), and better looking than store bought options. He also installed them, the granite, and the sink. The wood gets a little less yellow after a year or two.
While things are ripped apart, run plenty of electrical circuits, run some conduits from the basement going to blank boxes in the wall or cabinets. You can use these empty runs for power, ethernet, telephone, tv coax, extra switches, whatever the future demands of your kitchen. Undercounter lighting is a good thing, because you're often facing your own shadow when working at a counter. The damn bulbs burn out all the time though and they are not cheap. When LED lighting gets less expensive, I will convert to that.
Combination microwave / exhaust vent is a great thing.
Pick a floor material that does not show dirt/dust and will match well with your cabinets and countertop. I like cool tiles under my bare feet, my wife prefers warmth whenever possible.
