For whatever reason, tile countertops are very popular in California. Mine is 22 years old with baby blue tile and salmon color grout. Why, oh why, would I want to get rid of it?
Most of my friends out here have tile, and a lot of new construction gets it, too. I can't point to why it's so popular. Probably more elegant looking than formica, but not as expensive as corian or a slab of marble or corian.
So as for the worry of bacteria, I'll have fewer (and smaller) grout lines than today. And what doesn't kill me only makes me stronger!
FYI there are 2 types of bullnosing I know of. 1 is a separate tile that goes along the front edge. It is curved and has a little lip to catch spills. The other is just a rounded edge. The guy I'm talking to for tile will round off the any edge and/or corner to give it a professional look. I've seen one with square edges that looks pretty good, too.
