I would say the best cat are the free ones, just get a healthy one! You can probably find them for adoption at some of the pet stores where they support SICSA or other animal shelters.
FWIW if you are getting 1 cat I prefer Male cats. If you are getting 2 get one of each. It's also not really any harder raising 2 of them, just a little more litter to clean up however they wear themself out playing which does make it easier. I started out with 1 cat (parents have his brother) which my brother & his x found camping. Then he needed a friend so I took in a neighborhood cat at 2-3 months old. A few months later I was leaving a movie theatre & found a 3-4 week old kitten running around a parking lot scared to death. I told myself no more then 2 cats however after bottle feeding her I couldn't get rid of her. Then I met my wife & when we were dating he parent's had a cat which had 6 kittens. Somehow my wife talked me into keeping 3 of them....
