I'm quite familar with thai curries and has just about exhausted the possibilities afforded by the little tins of prepared curry paste. I've also made equaivalents by starting with simmerring chicken bones and galangal. I'd like to move up a level and get into making indian curries. Anyone care to run through the basics of indian curry on a Saabnet post? I'm looking for something along the lines of, simmer these five spices in oil for 15 minutes, then add chicken/goat/cow/pig/tomatoes...
Incidentally, is it bad to eat the spicy mango pickles that come in a jar? I'm addicted to them.
