I would look on the thousands of websites from India (most are in English), that have real authentic recipes including regional ones. In our part of India, Gujarat, in the heated oil we put cumin seeds, black mustard seeds, heat them up until they start to pop, then add onions, garlic,then after a few minutes add vegetables such as potatoes or okra, then add turmeric, a spice combo called dhana jeeru, red chili powder and salt.
This is a generic recipe for vegetable shak or subjhi, the website people I list below have real recipes...
