Curry is a very generic term as it is just one of many combinations of spices. There are different combinations of spices for vegetables, fish, lamb, and they vary by region of the country too. I suggest that you search on-line for recipes and then, if you're in a larger city, you go to a local Indian grocery store and buy a prepackaged masala mix for what you want to cook. You've got the concept right about heating oil and then adding spices to infuse the flavor.
Mango pickles are great, people in India have been eating them for probably 1,000 years without ill effects and the turmeric (yellowish spice) they add has been found to help prevent cancer. Homemade mango pickles are better though. Maybe you can look for a recipe on-line for that too.
