I have Mavic Open Pro wheels with Shimano Ultegra hubs on my bike, they have approximately 10,000 miles on them and still ride perfectly - I believe that I slightly trued the rear wheel once in the several years that I have had them, and the roads here in suburban Chicago are not particularly good. The key to good wheels is in their assembly, i.e. even tension on all the spokes, and somewhat on the spokes used (DT Swiss double-butted for me).
My wheelset comes from Colorado Cycles, was part of a gruppo that I bought to build the bike. They took great pride in their wheel building and seemed to do a lot of custom work, or at least they did before Mavic came out with their Ksyrium series of pre-made wheels, and all the others like it, that are now so popular. One option that they used to offer is that they will build up wheels with your old hubs - you may want to give them a call to discuss this.
I ride normal 28-spoke wheels. If you are a Clydesdale (meant in a nice way), perhaps you need to consider 32-spoke wheels?
