It is no set rules for that.
Let's say you are doing 70mph with a fully hot engine and hot weather and suddenly a coolant hose break draining all the coolant without you noticing.
You only have a few minutes to shut down and open the hood to allow the engine to cool down to not risk the head gasket and warp the head.
One rule of thumb is that you can't damage the head gasket as long as it is coolant in the engine surrounding the cylinders and head.
The coolant has to be steamed off first before the engine heat can rise to critical levels.
But with a blown radiator or hose, that happens very quickly.
So in your case, I'm pretty sure nothing bad happened.
