Most of the time I have the top (north) and bottom (south) ones a bit below medium and the middle one on low. I cook on the middle one. I'm currently using both north-south and east-west flavorizer bars. Seems like overkill, but really works well and seems to control the heat on the food better. Previously I'd only used one type or the other.
This seems to work well.
I crank it up with all 3 on high for 5-10 mins, then scrape it. Let it heat up again for a few mins, then cook as above.
