1)The signal to the injectors is like Dean said, pulse width modulation (PWM), which is a form of digital signal. The only way to "See" this is to hook up an oscilliscope. Then you would be able to see the "width" of the pulse which determines how long the injector is open (and thus how much fuel is flowing).
2) I dont know exactly how the T7 signals to the throttle motor work, but it is probably a stepper motor that recieves pulses from the ECM and opens and closes the throttle based on the number of pulses.
