Looking for advice on ground up rebuild

I'm rebuilding a B234R for my '94 Aero. I figured you guys probably rebuild motors all the time, so this might be a good place to ask for advice.
I've gotten the engine block back from the shop after having it cleaned and checked, and the crank polished. The shop I had do the work told me I needed standard sized bearings.
In reading the Haynes manual, it mentions red, yellow, and green varieties of standard bearing shells. You're supposed to check the operating clearance with a plastigage and use a combination of the different types of STD shells to obtain the correct clearance. However, as far as I can tell, there's only STD and +1 oversize available. That's it, no red, yellow, or whatever.
So is the procedure in the Haynes all for not? does it really not matter? I did the plastigage check, and I'm within spec, so it doesn't matter for me, but would I be stuck with having the crank ground down and going to a +1 if I were out of spec?
Also, for those of you who have been to this level of engine building, any tips on installing new bearing shells and piston rings? The oil control ring in particular looks so flimsy that it'll be difficult to install without destroying.
