For clarification, that curve is logged data from MAF while driving under WOT so that is the airmass that the car produces, not a further conversation table for the unit.
Here is a old study of mine
Pro flow provides flow vs. voltage data for some "tuning" MAF's, here MAF's

First I wanted to see how big of an error is generated if the wanted flow (+200g/s) is being predicted by MAF results that are only supplied to 140g/s or so.
For that given MAF (behind the link above) regression of flow (40-140):
y = 1,9694x3 + 0,9262x2 + 7,9785x - 1,2275
Error at 200 g/s ~0.1%
Error at 250 g/s ~0.2%
For the Saab MAF regression of flow based on WIS (40-140):
y = 2,487E-10x3 + 3,435E-7x2 - 0,0040025x + 14,79
I have the plots that go along with the text above, just need to look them up.
