The convertibles are more expensive to manufacture - they require more components not only on top but also under the car (reinforcements), the convertible tops are a b#tch to fit and require more manpower per vehicle than sedan, they run in lesser numbers so the additional cost of convertible-specific engineering and tooling is more per vehicle, when compared to sedan, etc. That's why they cost more. Also they are considered more of a fancy / almost luxury, so if you want one, you're expected to pay the premium.
There's nothing they offer other than the convertible top. To me though this would quite justify the additional cost, had I lived in a warmer climate where I could get an extended use of it.
In many brands the convertibles are less structurally sound than the sedan they were derived from, as the manufacturers cut corners in effort to save cost, and don't provide enough reinforcement. This doesn't mean they are going to fall apart, more like they won't deliver equal performance in cornering. However this doesn't apply to Saab convertibles, from what I heard, they are built exceptionally well, from a structural standnpoint.
