I have a 01 V70 with 168hp and 5 speed. I also have a 00 9-5 LPT sedan 5 speed. Sorry, but only the Aero's seats are better than the Volvo's! The V70 seats are comparable to my 94 9000 - one of the most comfortable cars I have ever been in!
The V70 is an excellent highway car. The engine does sound like a washing machine, but mine seems equally smooth to my 9-5. MPG on my 9-5 is somewhat better on the highway, worse in the city. V70 gets 29-30hwy, 21-22 city.
Even though the hp sounds low the engine does a decent of motivating the car - but I do find it has a lot more power with super vs. regular gas. My 9-5 is barely faster to 65 and I race up to speed on highway entrance ramps all the time. I find it a very satisfying car to drive, especially with the 5 sp. The Saab's 5 sp does not shift as well and 5th gear lugs too much below 40mph for my liking. V70 engine feels torquey and loves pulling 5th even at 30mph (which I think accounts for the better city mileage).
Another plus is many V70s are ULEV rated; I don't think any Saab is. (I even see for 2005 one can find a SULEV V70)
The drawbacks: the Saab definitely handles better - the V70 is practically a Buick, back seat is not quite as wide as 9-5, manueverability is also better in 9-5 (turning radius, in particular).
Personally, I think both cars are great, but your wife should try them both.
