Hi gap,
I had a similar problem (1999 9-5 SE, 200K); unfortunately it turned out to be the head gasket. It would take 20 or more minutes of driving and then the cooling system would over pressurize and "burp" via the radiator cap. This would result in coolant sprayed around the engine, dripping and sometimes steam. After the burp, apparently, the pressure would be relieved and the car would keep on running as usual with normal temperature but low on coolant.
Once on the highway I happened to notice the temp gauge spike then go back down again and when I pulled over, coolant was dripping out and the coolant level was low. Had not noticed any steam since I was going at highway speeds. Another time it happened in town and I noticed steam from the hood at a stop light but had not noticed the temp gauge. Not sure if the burp was due to hot combustion gas building up or steam from the combustion gas or or some combo.
During diagnosing, the dealer did a "chemical test" to look for combustion gases in the coolant, found none. We also checked for coolant in the oil and oil in the coolant. Replaced the thermostat ($400) and tried a new radiator cap. They also tried letting the car idle with the radiator cap off and it would gurgle. Despite my hopes, all that was left was the head gasket job ($2000) which fixed it.
