Overheating Some More

After I shut off my car when it's warm out, the temp gauge creeps up. I was thinking it was a thermostat issue and called my mechanic. He said that seeing as it only really overheats when it's off, it's most likely not the thermostat. The picture below is what it got to today, although last summer it did reach the red section after sitting int he parking lot of Home Depot for about 10 minutes. As soon as the car is turned back on and runs for a little while it drops back down. My mechanic suggested a temperature sensor was getting a bad reading, but the coolant sensor was replaced only 40k miles ago for reading too cold. Maybe the adjusted it so it reads too hot now? Haha if only... It also creeps up if I drive up a large hill with the A/C on. Maybe the engine is just getting that much warmer to put the gauge in the next temperature band? He also suggested to slowly take off the coolant reservoir cap with a towel after shutting it off and the temp gauge goes up. He said if it didn't boil over it's most likely a sensor issue. I don't feel like boiling my hand off so I think I'll pass on that one... Any suggestions? Sorry, I'm bugging the board so frequently, my car is just going to shambles over the past few weeks.
