'00 V6t temperature reading question

Question for the masses. When I had my car hooked up to a Tech II for programming the various functions, I had my temperature gauge reprogrammed to act as a gauge rather than a moving idiot light. Removed the dead zone, etc. But, this has left me at a bit of a loss as to what I should consider "normal" on a very hot day, which we do not get very often here in Maine. Yesterday was one such, it was about 96 degrees. At fast highway speed (85+), my car was running at about 2/3s between hot and cold on the gauge. Normally it runs dead on 1/2.
Anyone think I should be concerned? My feeling is that this is why Saab programs the gauge the way they do and I should not be alarmed. Not liking the idea of changing the thermostat on the V6 just yet, it is a heck of a project, and expensive.
