It was last year and the situation was similar to the one you described. It was summer (Virginia, 98F), I was going on a highway 65-70 for about an hour. I pulled over to put gas in my car, so I immediately shut it down. I went out, put gas in (about 3-4 minutes), came back, and turn the car to ON (not start; I always allow for CHECK OK and all lights to go away before I turn it over). The temp gauge showed close to 3/4 mark (not as high as yours). But as soon as I turned the engine on (really, 5-10 seconds) it dropped back down to middle.
I guess it is more a fact that it's a V6, with bigger block and internal oil cooler, that makes that happen. But I would say as long as it is fine when you drive, after you shut it off it does not create more heat anymore and nothing is causing any friction either. So I wouldn't worry about that heat spike after shutdown, unless you'll start seeing it during drive as well.
