Hi Fred,
I did my HG last year, so subsequent problems I must admit. Hard to see what you would have done to cause any oil pressure problems. I recall it was important which way the cams and cam bolts went back in, as some of them fed oil, but everything was numbered quite obviously. Aside from that, I can't recall anything unusual in the oil system that could be assembled incorrectly so as to cause what you're describing. Others far more experienced than I might have some ideas though.
Given you've tackled the HG, dropping the sump is not anything to be scared of, and is good preventative maintenance in any case, I did mine shortly after getting the car (used). Certainly you should not drive the car with the light flickering, not good.
Maybe test the oil pressure sensor before pulling the sump, but really, given these engines are prone to it, good idea to drop the sump and ensure your pickup is clear. If it's not, the engine's life expectancy can be pretty much measured in minutes...
